Why do rockets emit huge fires before takeoff?

For every action there is equal and opposite reaction. In this case action is going of rocket in upward direction and reaction is the pressurised air force coming out. This pressurised air force also known as thrust is produced by burning of fuel resulting in fire(flames) and smoke.
